Hello Everyone!I hope that you have been enjoying your long weekend so far. I have been studying for days, since as soon as I get back to class next week, I will be hit with 2 big tests. Have they no shame?! To make poor mommies cook like crazy AND study! There ought to be a law against such cruel and unusual punishment... I really need a break, but then, I really need to keep studying, because none of it has seemed to stick yet!!!Today has started out trying to be sunny. It is the perfect day to go out and play. I would love to be out in the woods about now hunting mushrooms. This is perfect mushie weather. It has been raining for several days, so the forest floor is wet. Jes the thang for finding those lovely little munchies. I can imagine the golden chanterelles and the pretty white oysters as we speak!So how come we aren't out there?Well, because my lovely daughter is still asleep. At noon. And my son is marinating in the tub, playing with his toys and inventing all sorts of tales about anything and everything... It seems that my idea of a good time isn't theirs. Oh well. I guess it is Karma, scolding me for not paying better attention to Political Science. That is actually where my mind should be right now, not on mushies.So enjoy your holiday and by al means, find something to do that you love, and don't worry about all of life's little cares. That is what the holidays are for! I will find you the recipe for wild mushroom risotto that is in my book, and hopefully, before the weekend is over, I will get a chance to use it myself. I know, I know, there are only 2 of you out there who actually read my blog, and one of you makes fun when I mention Harry Potter, but tonight I had a blast with my daughter watching the new movie. For those of you who might actually be fans of the series, this was the best movie yet!!! I admit it, I had kids in the first place just so I could get away with watching Bugs Bunny. Once I started reading to them at bedtime it became another excuse to be a large child myself, and enjoy the plots along with my sleepyheads. Reading the H.P series holds especially dear memories for all of us, spending long hours together at our nightly ritual. It has given us a common ground, and because of it they have developed a love of books that they might not otherwise have. That is ultimately the most rewarding aspect of all.When the movies started coming out, it was an excellent opportunity to take them and spend more of that precious quality time. I only went to look at the special effects, don't you know (wink, wink) After all, that is one of the things I would like to do with my college degree, designing computer animation. If I managed to have a great experience at the same time, then so much the better. This movie is loaded with some really exciting movie magic! And so you can make fun of me for going to see a "kiddie" movie tonight with my offspring. Trust me, I wasn't the only adult there! My daughter and I had a wonderful time together, and I can tell you right now that I would do it again. And again!
Since no one reads my blog for the wit and wisdom, here is a recipe for you instead: It is a great sausage with much less fat, and no preservatives.
Turkey Sausage
1.25 pounds ground turkey (comes prepackaged or buy fresh)
1 small onion minced
2 tbls. chopped fresh parsley
3 large cloves garlic, minced
1 tsp. salt
1 tsp. fennel seed
2 tsp. McCormick/Schilling Turkey Rub (sold in jars)
1/4 tsp. pepper
Mix all ingredients well and chill at least overnight to allow flavors to blend.Use a little cooking spray in the pan to prevent sticking. Can be used as a breakfast sausage, or in recipes calling for Italian sausage, and it makes great meatballs and turkey burgers.
There is a point in your life when things go right for a little while, and (not to cheese off karma or anything) I am enjoying it while I can.
The money gods have been giving me a little extra lately, and I just found out I won another big scholarship this week. So I had to run out and get more letters of recommendation, so I could fill out some more applications... Its a vicious circle, but what ya gonna do? That is why I decided to go to college, to earn more money! Financial aide, higher wages, free lunches, half-off coupons, ~~~ its all good!!!
Actually, I do work hard to get the grades, and despite math, I am still in love with learning.
Ok, ok, yeah that means I need to get out a whole lot more than I do, but in keeping with the %$#*&^% "glass is half-full" thing, I try to make the best of the situation.
My turtle eggs seem to have slowed down in the development department. Could be that they were duds and I just wanted them to hatch so much that I was seeing what wasn't there... I'll keep you posted.
